What is the most cost-effective material for pots and pans?

Stainless steel is durable and affordable, but alone it is not a good conductor of heat. Look for stainless steel with a copper or aluminum core.

Do the lids matter?

Yes. A loose fitting lid will allow moisture to escape and may make cooking messier than it needs to be. Make sure the lid fits tightly and the handle is securely attached.

What about metal utensils? Are they safe to use on non-stick surfaces?

Generally it’s not a good idea. Metal can scratch and compromise the coating. High temperature silicone utensils can handle the heat without melting and won’t destroy the coating on the pot or pan.
