Copper Pots
Copper can conduct heat well. It is valued by chefs for
its heat distribution as well. Copper has some draw backs though. Proper
care is critical to keep its luster.
Most copper is lined with stainless steel because untreated copper can
react to acidic foods and cause leaching which can result in sickness.
Combining copper with another metal also helps to reduce the cost as
well.
Copper can dent and tarnish easily. To prevent tarnishing constant care
must be given. It must be cleaned right away will periodically need
to be polished to remove tarnish. Copper pots are best stored on a hanging
pot rack, as stacking in cupboards can lead to dents and dings.
